refactor(gate): 移除账号标签配置和多账号支持功能

- 删除 GateConfig 中的 label 字段及其 getter 和 builder 方法
- 移除 GateGridTradeService 中的 logLabel 字段和相关日志前缀
- 修改 GateTradeExecutor 构造函数参数,移除 label 参数
- 重构 GateWebSocketClientManager 为单账号管理模式,移除 AccountInstance 内部类
- 更新 GateWebSocketClientManager 初始化和销毁逻辑以适配单账号架构
- 调整日志输出格式,统一使用 [Gate] 前缀替代动态标签
- 简化多账号配置相关文档注释
